I pencilled out a schedule and this seems totally doable. If you leave on a Friday after work you would have 17 driving days with a 2 week vacation.
This would give you 4 rest days that cover the Classic weekend. Plus a rest day before going back to work.
Most people do NOT get 8 hrs of sleep but assuming you do that leaves 16 hours per day to get 5 hours of driving done on most driving days. You could split that up as you see fit.
Assuming 60 MPH:
Friday - 300 - 5 hours until 10ish
Saturday - 600 - 10 hrs
Sunday - 300 - 5 hrs
Monday - 300 - 5 hrs
Tuesday - 300 - 5 hrs
Wednesday - 380 - 6 hrs
Thursday
Friday
Saturday
Sunday
Monday - repeat above schedule or variation
Tuesday
Wednesday
Thursday
Friday
Saturday - arrive home
Sunday - rest?

The only problem I see with that schedule is dipping into YUBuggin time.

Unless your bug cruises @ 80, I think you should consider dropping your average speed down to 55. When I did my trip, I planned for an average of 45mph and my bus could do about 60. It came out pretty close. Plus, for 1/2 the trip I only had to answer my own bladder and hunger urges. Also, you need to plan to break down somewhere. That's going to blow 1/2 a day at least. You might also want to switch Sunday to your 380 mile day. Texas is 870ish miles wide and gets hotter as you travel west. Make a "plan b" to be driving in the early mornings or possibly late nights.

i was thinking it looked like an average mph of 80 that pushing it i would also do night riding
